Cream Cheese and Smoked Ham Tortilla Triangles with Salsa Dip

Ingredients:

  • 200 grams tinned whole tomatoes, drained and chopped
  • ½ small red onion, peeled and finely chopped
  • 1 garlic clove, peeled and crushed
  • 1 Tbsp fresh coriander, finely chopped
  • 1 tsp dried mixed herbs
  • 1 Tbsp tomato paste
  • chilli powder, to taste
  • 1 medium wholemeal flour tortilla
  • 20 grams extra light cream cheese
  • 50 grams extra lean smoked ham slices

Instructions:

  1. Pour the tomatoes into a large mixing bowl, adding the onion, garlic, herbs, tomato paste and chilli powder. Mix thoroughly and set aside.
  2. Spread the tortilla with the cream cheese. Place the sliced ham on one side of the tortilla. Fold the tortilla in half and cut into 4 triangles.
  3. To eat, simply dip the cream cheese and smoked ham tortilla triangles into the spicy tomato salsa.

Chef’s suggestions:

  • For gluten-free, replace the wholemeal tortilla with a gluten-free tortilla or flat bread.
  • For dairy-free, replace the cream cheese with silken tofu.
