Baked Chicken French Style

Ingredients:

  • 1 medium brown onion, peeled and finely chopped
  • 2 medium eating apples, peeled, cored and grated
  • 115 grams carrots, peeled and grated
  • 1 garlic clove, peeled and crushed
  • 1 bay leaf
  • 2 skinless chicken breasts (115 grams each)
  • 150 mls dry white wine
  • sea salt and freshly ground
  • black pepper
  • 50 grams cooked brown rice

Instructions:

  1. Place the prepared vegetables, bay leaf and fruit into the base of a deep casserole dish.
  2. Lay the chicken on top, pour the white wine over it and season lightly with a little sea salt and freshly ground black pepper.
  3. Cover and put into a very low oven (on miser setting if you have one) for at least 2 hours till the chicken is falling apart and the vegetables have reduced to a sauce-like pulp.
  4. When the chicken is almost ready, prepare the rice as per the packet instructions and divide between two serving plates. Top with the cooked chicken and vegetables and serve immediately.

Chef’s suggestions:

  • Make this dish Italian style by adding chopped tomatoes, mushrooms and fresh basil instead of carrots and a bay leaf.
  • You can also use skinless turkey breast instead of skinless chicken breast.
  • This is the sort of dish you can prepare and then go out to work or a walk and leave it to cook slowly either in a very low oven or a slow cooker.
