Instructions:
- Place the prepared vegetables, bay leaf and fruit into the base of a deep casserole dish.
- Lay the chicken on top, pour the white wine over it and season lightly with a little sea salt and freshly ground black pepper.
- Cover and put into a very low oven (on miser setting if you have one) for at least 2 hours till the chicken is falling apart and the vegetables have reduced to a sauce-like pulp.
- When the chicken is almost ready, prepare the rice as per the packet instructions and divide between two serving plates. Top with the cooked chicken and vegetables and serve immediately.
