Instructions:
- With a sharp knife, score a cross at the base of each tomato then place the tomato in a bowl of boiling water for 1–2 minutes.
- Drain and rinse under cold water. Then peel the skin off, roughly chop it and place in a small bowl with the fresh, torn basil leaves, garlic, a dash of Tabasco sauce and season well with sea salt and freshly ground black pepper.
- Lightly toast the bread on both sides under a hot grill.
- Rub the cut side of the garlic clove over the toast.
- Top with the tomatoes then place back under the grill to heat through.
- Remove from the grill, place the sliced ham on top and eat immediately.
